With 12 years’ experience in the Caribbean Sea, we do our very best every day to provide a high-quality service. I have learnt to use different fishing techniques depending on the season; April, May and June are the most eagerly awaited months for fishing for mahi-mahi, sailfish and even blue marlin, but we also catch swordfish, barracuda, white marlin and wahoo, amongst many others, and my experience of preparing ceviche on board is a real treat for our customers.
